Let's Brew El Progreso

This “Double Fermentation” lot from our friends at El Progreso is wonderfully complex and delightfully sweet, presenting highly unique tropical and pastry-like flavors.

Pour Over preparation will lead to fruitful coffee that is tempered by rich sweetness. Expect the flavor, and mildly tart acidity, of passionfruit paired with the refreshing qualities of fresh lychee. As the cup cools the rich, cream-like, sweetness of vanilla custard begins to present itself.

The AeroPress will produce a slightly more full-bodied cup, further highlighting this coffee’s cream-like custard qualities. Once again, expect the sweetness of fresh lychee and mild tartness of passionfruit.

More about Loma La Gloria...

Loma La Gloria, “Hill of Glory,” is owned and operated by second generation coffee producer Anny Ruth. Anny was introduced to the world of specialty coffee more than 20 years ago when here father, Roberto, purchased their family’s farm and began cultivating coffee.

Anny and her team are meticulous in regards to their natural and honey processed lots. They harvest all of the coffee by hand to ensure that only the ripest possible cherries are being selected. The coffee is then carefully sorted by size, quality, and sugar content in order to create uniform lots, before being placed in neat rows and sun-dried in an open air environment.

Each lot is turned regularly during the drying phase in order to avoid defect, mold, and/or over-fermentation. The crew at Loma La Gloria rotates the natural processed coffees multiple time each day, allowing them to dry thoroughly and uniformly.

Their work speaks for itself, year in and year out Anny and her team are responsible for producing some of the most complex and well-balanced El Salvadorian coffees on the market.

Equinox, as its name would suggest, is coffee that was curated, and roasted, with balance in mind. Our staff has chosen to pair two of our favorite annual lots together in order to produce a coffee with complementing levels of sweetness and acidity.

Both of the components come to us from our friends at Loma La Gloria. The single-varietal lots that we have selected are (1) a honey processed Red Bourbon and (2) a natural process Orange Bourbon.

We find that the Red Bourbon provides the crisp acidity of red apple, while the Orange Bourbon offers the richness of pie crust and aromatic qualities of baking spices.

Brewing Equinox

Equinox is a unique offering that combines two of our favorite lots from our friends at Loma La Gloria. Our roasting staff chose to combine these two distinct varieties to present a coffee with near equivalent levels of sweetness and acidity.

Pour Over preparation yields a harmonious cup, with the initial acidity of red apple meeting the intense richness of pie crust and brown sugar; as the cup cools, an array of spice notes begin to take over the palate, leading to a long and pleasant aftertaste.

The AeroPress will offer a slightly more fruit forward coffee, with notes of apple, blood orange, and cranberry; with time the warming qualities of baking spices will present themselves, as will a rich cocoa-like aftertaste.
