Approach: Ridgeline is our lightest roasted year round offering. Aromatic and complex, components are carefully sourced to provide a cup with prominent fruit characteristics and complementary sweetness.

Brewing Ridgeline

Ridgeline is served as our house espresso but it has become a popular auto-drip option for those who desire a fruit-forward cup.

We recommend starting off with a brew ratio of 62.5 grams of coffee for every liter of water. Adjust the dose to taste in small increments (+ or - 2.5 grams at a time).

The goal is to produce a cup with the flavor and acidity of blackberry and the sweetness of caramel; providing a dynamic, yet well-balanced, cup.

Under extraction will lead to an excessively tart cup that lacks body and, while over extraction will produce a coffee with little perceivable sweetness and an unpleasant aftertaste with medicinal qualities.

Let's Brew El Progreso

This “Double Fermentation” lot from our friends at El Progreso is wonderfully complex and delightfully sweet, presenting highly unique tropical and pastry-like flavors.

Pour Over preparation will lead to fruitful coffee that is tempered by rich sweetness. Expect the flavor, and mildly tart acidity, of passionfruit paired with the refreshing qualities of fresh lychee. As the cup cools the rich, cream-like, sweetness of vanilla custard begins to present itself.

The AeroPress will produce a slightly more full-bodied cup, further highlighting this coffee’s cream-like custard qualities. Once again, expect the sweetness of fresh lychee and mild tartness of passionfruit.
